Pineapple-Raisin Sandwich

Ingredients:

1/2 cup mini raisins
1/2 cup canned crushed pineapple, well drained
2 tablespoons mayonnaise
2 tablespoons yoghurt
lettuce leaves
minced scallion, optional
8 sliced egg and milk bread if available or use plain

How to make Pineapple-Raisin Sandwich

  • In a medium bowl, blend raisins, pineapple, mayonnaise and yoghurt. Chill for 20 minutes.
  • Place lettuce leaves on 4 bread slices. Spread pineapple-raisin mixture over lettuce. Sprinkle scallion if desired.
  • Top with the remaining bread slices and serve.

    Pineapple-Raisin Sandwich

    this is not a vegetarian sandwich because of the egg. and egg is also present in the mayonnaise 🙂

      It can still be a vegetarian by replacing the mayonnaise to a vegenaise(no eggs at all.
