1/2 cup mini raisins
1/2 cup canned crushed pineapple, well drained
2 tablespoons mayonnaise
2 tablespoons yoghurt
minced scallion, optional
8 sliced egg and milk bread if available or use plain
How to make Pineapple-Raisin Sandwich
- In a medium bowl, blend raisins, pineapple, mayonnaise and yoghurt. Chill for 20 minutes.
- Place lettuce leaves on 4 bread slices. Spread pineapple-raisin mixture over lettuce. Sprinkle scallion if desired.
- Top with the remaining bread slices and serve.
