Soft-Cooked Eggs

Method 1

  • Place eggs in enough boiling water to cover them.
  • Remove from fire, cover, and allow to stand 5 to 8 minutes, depending upon the degree of coagulation desired.

Method 2

  • Place eggs in enough cold water to cover them.
  • Place over moderate heat and allow to stand until water reaches the boiling point.
  • Remove at once, plunge into cold water. Serve.
