1 tbsp. olive oil
1 tbsp. onion, chopped
1 tsp garlic, chopped
1 tbsp. flour
1 large cucumber, cubed, skin and seeds removed
1/2 cup celery, cubed, leaves removed
1 cup chicken stock
2 tbsp. coriander, chopped
1 tsp. chili powder
2 tsp. lime juice
salt and pepper to taste
How to cook Celery and Cucumber Chilled Soup
- Heat oil in pan. Saute onions and garlic. Add cucumber and celery, cook for a few minutes.
- Add in flour until blond in color. Slowly add the chicken stock Bring to a boil and simmer.
- Put mixture into blender and strain. Bring back to heat. Season with coriander and chill powder.
- Bring to room temperature then chill. Once chilled, add lemon juice.
