Bibingkang Malagkit

This is a recipe of baked rice cake made out of glutinous rice, coconut milk and cream, sugar and anise. This is type of kakanin very similar to biko which is also made from glutinous rice which is sweet but does not have a topping of coconut cream and brown sugar. Bibingkang malagkit does have that dark brown sweet topping made from coconut cream and brown sugar which is baked until the topping becomes crust of golden dark brown and sticky layer.

Ingredients
  

  • 2 cups malagkit glutinous rice
  • 2 1/4 cups coconut milk
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/4 teaspoon anise
  • 3/4 cup coconut cream
  • 1/2 cup sugar

Instructions
 

How to make Bibingkang Malagkit

  • Boil coconut milk and malagkit with salt. Boil until quite dry.
  • Lower heat and add brown sugar.
  • Place in banana leaf-lined baking pan.
  • Pour on top the coconut cream and sugar.
  • Bake until a golden crust is formed.

    You forgot the temperature setting for this recipe [bibingkang magagkit}. I assumed it’s 370 F.
