A simple egg sandwich with pickles and mayonnaise.
Olives or dill pickles, chopped
5 or 6 eggs, beaten
1/4 cup mayonnaise
How to make Creamed Egg Sandwiches
- Heat butter on frying pan and add eggs, mayonnaise, olives or pickles, and salt.
- Cook slowly. stirring constantly until the eggs are of the desired consistency.
- A little chopped parsley may be added if desired.
- Place between thin slices of buttered bread. May be served either hot or cold.
- Yield: 6 to 8 portions.
