This is a vegetable fritters made from carrots, sweet potatoes, flour and potato starch. It contains no meat, fish or shrimp so this is perfect for vegetarians.

For the vegetable fritters

  • 3/4 cup all-purpose flour
  • 1/4 cup potato starch
  • 1 cup water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups sliced beans
  • 1 medium carrot julienne
  • 1 medium sweet potato julienne
  • Cooking oil for deep-frying

For the dip

  • 1/2 cup vinegar
  • 2 teaspoons crushed garlic
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped onion
  • 1 jalapeno chili sliced


Make the vegetable fritters

  • In a medium bowl, combine flour, potato starch, and water.
  • Mix until smooth. Season with salt and pepper.
  • Add beans, carrots, and sweet potatoes. Mix thoroughly.
  • In a deep fryer, heat oil and cook about 1/4 cup of the vegetable mixture in batches until golden brown.
  • Drain on paper towels. Serve with dip.

Make the dip

  • In a bowl, combine vinegar, garlic, pepper, onion, and jalapeno chili.
  • Serve with fritters. Makes 6 Servings.
