Almond – Strawberry Slices

Ingredients:

1 envelope unfavored gelatin
1 qt. fresh strawberries, hulled
1/3 cup strawberry preserves, cut up
1 cup whipped cream
2 tbsp sugar
1/4 tsp almond extract
1/2 tsp vanilla
1/2 cup chopped almonds

How to make Almond – Strawberry Slices

  • Soften gelatin In 1/4 cup water; dissolve over hot water. Set aside sieve berries, blend In preserves and 2 tablespoons of the dissolved gelatin.
  • Pour into freezer tray, freeze till slushy, about 45 minutes. Turn into chilled bowl; beat well divide mixture between two 16-ounce fruit or vegetable cans; freeze till almost firm, about 1-1/2 hours with long-handled spoon, push mixture evenly up sides of cans leaving centers hollow.
  • Whip cream with sugar and extracts till mixture begins to thicken; add remaining gelatin (remelt, if necessary)
  • Whip to soft peaks Fold In almonds. Spoon Into hollows In cans Cover and freeze. Slice to serve. Good for 8-10 servings.
