Vegetable Fritters Medley


This is a vegetable fritters made from carrots, sweet potatoes, flour and potato starch. It contains no meat, fish or shrimp so this is perfect for vegetarians.

Ingredients
For the vegetable fritters
  • ¾ cup all-purpose flour
  • ¼ cup potato starch
  • 1 cup water
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1½ cups sliced beans
  • 1 medium carrot, julienne
  • 1 medium sweet potato, julienne
  • Cooking oil for deep-frying
For the dip
  • ½ cup vinegar
  • 2 teaspoons crushed garlic
  • ¼ teaspoon pepper
  • 2 tablespoons chopped onion
  • 1 jalapeno chili, sliced
Instructions
Make the vegetable fritters
  1. In a medium bowl, combine flour, potato starch, and water.
  2. Mix until smooth. Season with salt and pepper.
  3. Add beans, carrots, and sweet potatoes. Mix thoroughly.
  4. In a deep fryer, heat oil and cook about ¼ cup of the vegetable mixture in batches until golden brown.
  5. Drain on paper towels. Serve with dip.
Make the dip
  1. In a bowl, combine vinegar, garlic, pepper, onion, and jalapeno chili.
  2. Serve with fritters. Makes 6 Servings.
