Chocolate Cake


This dessert recipe is a rich and buttery chocolate cake dessert with chocolate fudge frosting. You can make this chocolate cake in any occasion but in can be also be served in special occasions because it is a rich dessert. The cake is moist and dense and it can be made in 2 to 3 layers depending on the size of the baking pan you are going to use.

Ingredients
  • 120 grams semi-sweet chocolate
  • ½ cup boiling water
  • 1 cup (224 grams) butter
  • 2 cups (400 grams ) sugar
  • 4 eggs, separated
  • 1 tsp. vanilla extract
  • ⅛ tsp. salt
  • 1 tsp. baking soda
  • 2½ cups (300 grams) sifted cake flour
  • 1 cup buttermilk or sour cream
Chocolate Fudge Frosting ingredients:
  • 4 Tbsp. cocoa (or 5 tablespoons unsweetened chocolate or 120 grams semi sweet chocolate)
  • 1½ cup sugar
  • ¼ cup butter
  • 1 tsp. vanilla extract
Instructions
How to make Chocolate Cake:
  1. Melt chocolate in boiling water; cool. Cream butter with 1 and ⅔ cups of the sugar and beat until light and fluffy.
  2. Add egg yolks one at a time, beating after each addition. Add vanilla to chocolate mixture. Add chocolate mixture to creamed mixture.
  3. Sift together salt, soda and flour. Add alternately with buttermilk to creamed mixture, beating well after each addition until smooth.
  4. Beat egg whites until frothy, then add the remaining ⅓ cup sugar in four additions, beating well until stiff but not dry. Fold into batter.
  5. Pour into three 8-inch (or two 9 -inch) greased pans with paper lined bottoms, and bake at 350 °F for 20 minutes. Cool. Frost with Chocolate Fudge Frosting.
How to make Chocolate Fudge Frosting:
  1. In heavy saucepan over low fire, cook cocoa, milk and sugar, stirring continuously until mixture thickens and coats spoon. Add butter and vanilla, mixing well. Spread on cake while frosting is hot.
