How to Make Cheese Puffs

  • 1 cup cheese grated
  • 1/4 cup bread crumbs
  • 1 egg separated
  • 4 tablespoons sugar


  • Combine cheese, sugar, bread crumbs, egg yolks and sugar. Fold in stiffly beaten egg white.
  • Shape into balls about 3/4-inch in diameter. Roll in fine bread crumbs.
  • Fry in deep hot fat until brown. Drain off excess fat in absorbent paper.
  • Yield: 2 to 3 dozen puffs.
