For the vegetable fritters

Cooking oil for deep-frying
For the dip

vinegar

crushed garlic

jalapeno chili

Instructions
Make the vegetable fritters
In a medium bowl, combine flour, potato starch, and water.
Mix until smooth. Season with salt and pepper.
Add beans, carrots, and sweet potatoes. Mix thoroughly.
In a deep fryer, heat oil and cook about 1/4 cup of the vegetable mixture in batches until golden brown.
Drain on paper towels. Serve with dip.
Make the dip
In a bowl, combine vinegar, garlic, pepper, onion, and jalapeno chili.
Serve with fritters. Makes 6 Servings.
